1943 Haut-Brion
Dinner at the Ukai Taipei.
1943 Haut-Brion, rebouché en 2011, Sotheby's ex-château auction 4 October 2013 - served without decanting. Definitely smoky with tobacco notes, still got the fruit. Condition is very, very good and still very much alive. Around 30 minutes in there was almost a hint of metallic notes. Still OK at about 45 minutes in, with a hint of green bell peppers. The wine lasted more than an hour, which was a testament to its condition.

1943 trio
Dinner at Ya Ge in Taipei.
1943 Cheval Blanc, Eschenauer bottling - level was mid- to low-shoulder, much worse than another bottle opened in 2017. Nose was still very fragrant, with leather, animal notes, along with rose petals and other floral notes. Fairly light in terms of body once the sediment is discounted, but the fragrance was very lovely.
1943 Mouton-Rothschild, from Sotheby's Sale May 2016, Wines from the Cellars of William I. Koch - a bit more leather on the nose, minty, definitely more cigar notes, and certainly tastes like a Pauillac. Condition was still fairly good after nearly 80 years.
1943 Sisqueille Rivesaltes, mis en bouteille 2012 - kinda nutty, a little coffee, almost, and certainly honey.

Doquet and Cos Blanc
Dinner at Taïrroir in Taipei.
2008 Pascal Doquet Le Mont Aimé Cœur de Terroir, dégorgée 3 novembre 2021 - caramelized and mineral on the nose, a little toasty. Got some decent body with some bitterness on the finish. While this wasn't really sweet, it also didn't taste like a brut nature.
2018 Cos d'Estournel Blanc - served about 1 hour and 15 minutes after opening. Lots of polyurethane and acetone here. Maybe this needed some decanting to aerate further.

2008 George Hansen
Dinner at Peking Garden.
2008 George Pinot Noir Hansen Vineyards, from magnum #9/48 - still got the fruit, a little savory on the palate now, almost like soy sauce. Ripe and rounded, nice and complex. Very fragrant on the nose with leather notes. Drinking pretty well.

Rieslings and La Turque
Dinner at Woo Cheong Tea House.
2009 Keller Westhofener Kirchspiel Riesling Großes Gewächs - flinty, polyurethane, mineral. A little ripeness here and big on the palate, grippy and almost with a little bitter finish.
2001 Guigal La Turque - served about 30 minutes after decanting. A little dusty on the nose, with notes of leather. Not bad, with some fragrance and sweet fruit on the nose. Acidity was relatively high on the palate. Not nearly the beautiful La Turque I was hoping for.
1990 von Schubert Maximin Grünhäuser Herrenberg Riesling Kabinett - completely oxidized on the nose with Chinese licorice, and lots of white flowers. On the palate this was relatively dry and just barely off-dry, and very rounded.

Laherte Rosé de Meunier, dégorgée en mars 2022 - with lively red fruits.
2010 Domaine de l'A, en magnum - decanted 45 minutes after opening, and served 1 hour after decanting. Plenty of sweet fruit, vanilla, oak, and leather. Drinking pretty nicely now.

Cos Blanc and Mugnier

2016 Cos d'Estournel Blanc - flinty, kinda ripe, with a hint of oiliness.
2005 Mugnier Nuits-Saint-Georges 1er Cru Clos de la Maréchale - drank almost 2 hours after opening. Lots of leather, smoke, and grilled meats.

Matriarch and Merì
Dinner at Ramato.
2021 Argiolas Vermentino di Sardegna Merì - nose of tropical stone fruits like peaches, floral, flinty. Nice and light on the palate.
2002 BOND Matriarch - opened 1½ hours prior to decanting and served 30 minutes after decanting. Very minty, very ripe, very alcoholic. Lots of coconut butter, tons of exotic spices. Still going strong after more than 1 hour in decanter and almost 3 hours after opening. Still sharp and alcoholic on the nose, but sooooo beautiful!

Sake and whites
Dinner at Mosu Hong Kong.
2016 Cos d'Estournel Blanc - flinty, a little ripe.
Next5 Colors 2022 Ippakusuisei (一白水成) - seimaibuai of 50%. A little bit of fermented rice on the nose. Some sweetness on the palate but medium-dry mid-palate. Nose was pretty nice, fragrant but not floral nor too fruity, and a bit more alcoholic on the nose than expected.
Kamonishiki Brilliance Akaiwa Omachi (加茂錦 Brilliance 赤磐雄町), R4BY - seimaibuai of 40%. Pretty soft and elegant, with some fermented rice notes, a little on the sweet side. Very nice and richer with the sweet fermented rice notes.
Koshino Kagetora Nakatori Daiginjo (越乃景虎 中とり 大吟醸), R4BY - opened for 2 hours before serving. Nose was a bit more pungent, not as elegant, with stronger flavors.
2018 Bruno Colin Chassagne-Montrachet 1er Cru Les Chaumées - very toasty nose, with lots of lemon citrus and a bit of flint.

Pax, Noguchi, Laherte
Dinner at Sheung Hei.
Noguchi Naohiko Yamahai Omachi Muroka Nama (農口尚彦 山廃雄町 無濾過生原酒), 2020 - rich notes of starchy rice on the nose. Dry on the palate.
2005 Pax Syrah Alder Springs Vineyard 'The Terraces' - drank 1½ hours after double-decanting. Really sweet and jammy at first. Notes of eucalyptus and a little leather. Still got tannins.

Laherte Rosé de Meunier, dégorgée en mars 2022 - lots of strawberries, so fruity and happy.

Wine pairing at MONO
MONO x Toyo Eatery dinner.
Krug Grande Cuvée, 170ème Édition, ID 221042 - more toasty on the nose than I remembered, but that's very, very classic Grande Cuvée. Pretty popcorn. Wonderful.
Black Kite Theobroma Blonde - OK la... pretty nice on the palate, at least it's not bitter. Some honey and a little caramel.
2019 Roda I Blanco - nose was very alcoholic initially and kinda fragrant. Very ripe on the palate, but grippy mid-palate with an acidic finish. Gained more body as the wine warmed up.
2018 Leflaive Mâcon-Verzé Les Chênes - a little toasty, with reasonable acidity balance.
2016 Bouchard Corton-Charlemagne - a more elegant wine. Later on this was much more buttery after enough aeration.
2019 Catena Zapata Malbec Argentino - very, very ripe and jammy, a little metallic almost, with lots of vanilla oak. Really sweet on the palate but the tannins were surprisingly soft. Showing some blueberries later.
2012 La Chapelle de la Mission - unfortunately this was very chalky and dusty so not too enjoyable. Pretty savory with lots of soy sauce.
